Recipe for delicious Festive Holiday Orange & Olive Salad (serves 4-6 small plates)
4 clementines sliced into rounds
4 blood oranges sliced into rounds
1/3 cup halved pitted green olives
3 Tbsp finely diced red onion
2 ripe avocados, scored into small/medium cubes
Juice of 1/2 lime (for gently tossing w/ avocado to keep from oxidizing)
Extra virgin olive oil to drizzle on top
Sea salt and fresh ground pepper to taste
Arrange sliced citrus rounds on a beautiful plate. Gently toss avocado in lime juice being careful not to bruise. Scatter prepared olives, diced red onion and cubed avocado over top citrus. Sprinkle with salt and pepper to taste and drizzle with extra virgin olive oil. Enjoy the burst of flavors!

Good morning lovely friends:) Today I’m sharing an integral part of my daily morning routine, my Liquid Gold Sunshine Elixir. I absolutely adore it’s sunshiney goodness and look forward to heading downstairs to enjoy it each day upon waking.
Be sure to have it on an empty stomach about 30 minutes before anything else to enjoy the liver flushing, detoxifying, vitamin C flood of sunshine power! I’m almost 50 years old and this is definitely one of my secrets to feeling my best.

Liquid Gold Sunshine Morning Elixir Recipe:
Juice of 1/2 to 1 lemon (I use 2 and I drink thru a glass straw to protect my teeth)
16 oz hot (not boiling) water
1/8 tsp turmeric (work your way up to more if you like- I use a lot)
Generous tsp Honey to taste
Stir and enjoy:)

Today I'm sharing the secret recipe for my delicious Rocket Fuel Green Smoothie which I enjoy daily. If you're looking for incredible energy, glowing skin, your ideal weight and to vibe high… then this one is for you!
Rocket Fuel Green Smoothie
(Rotate the greens you use in place of the spinach – KEEPING the romaine, celery and parsley/cilantro. Also you may rotate the fruit you use, but always KEEP the lemon, & ginger & the banana which gives it body and cancels out any bitter taste of the greens).
Makes Four 16 oz servings. I drink a 32oz serving/day
2 cups water
1 heart romaine
1 cucumber
2 stalks celery chopped
HUGE handful spinach (or broccoli, kale, chard, asparagus, dandelion – or a combo)
1/2 bunch cilantro or parsley
1 apple chopped
1 pear chopped
1 banana chunked
2” piece fresh ginger root
1 lemon peeled, chopped
stevia or dates to sweeten to taste (optional)
Add the greens and water to (a high speed ideally Vitamix) blender. Blend til smooth. Add 1/2 the fruit. Blend. Add rest of fruit/remaining ingredients. Blend.

The power of Chlorophyll (!) … which aids in gastrointestinal problems, promotes formation of hemoglobin and red blood cells, treats bad breath, detoxifies toxins that cause cancer, benefits the assimilation of calcium while balancing other trace minerals to rebuild, replace, and exchange with new tissue, fights infections and possesses bacteriostic properties that kill harmful bacteria and antiseptic properties that kill germs by strengthening the tissues.

Recipe for Mint Chocolate Chip Smoothies (Serves 2)
*Bonus Recipes for Mint Chip Ice-Cream & Pudding at end!
Ingredients:
1/4 ripe avocado (or sub a Tbsp coconut oil)
1/2 reeeeeaaally ripe frozen banana
2 Tbsp mint flavored liquid chlorophyll(chlorophyll has great detoxification power & should be implemented gradually. Feel free to substitute peppermint extract or a handful of mint.)
2 Tbsp cacao powder (or carob powder)
vanilla powder to taste (or vanilla extract)
a touch of sea salt to taste
stevia or your favorite sweetener to taste
2 Tbsp white chia seeds (I don't recommend using black chia seed in this as it can have a stronger thickening action that's a bit too viscous for this application. However, if it's what you've got on hand try starting with just 1-2 tsp. The black chia does vary in it's properties from brand to brand so perhaps yours will work fine. I recommend Chia Seed from The Chia Co.)
4 cups fresh nut milk (more or less depending on your thickness preference. Filtered water works surprisingly well too. Feel free to add a few ice-cubes in place of some of the liquid on warmer days for even thicker shake consistency)
Cacao Nibs,reserved for garnishing (optional)
Method:
Nothing to it! Throw everything except the cacao nibs into a Vitamix and blend. Garnish with the cacao nibs and enjoy 🙂
*Feel free to pump it up with a handful of greens &/or your favorite green powder (or even some maca) like I do. Sometimes I'll sub additional chia seed if I'm out of avocado and it's just as creamy and delish.
If you're in the mood for Pudding: use 1 (or 2) whole room temp banana, 1/2 (to 1 whole) avocado, omit the chia, and scale the nutmilk waaaaaay back, adding just a touch of liquid to get the Vitamix moving- by using the tamper you may find you don't need any liquid at all.
Mint Chip Ice-creamyou ask? Of course! Simply blend 2 frozen bananas, a little stevia, 1-2 Tbsp cacao & mint extract using the tamper to move things along in your high speed blender (Vitamix recommended). Yummy!! So many options 🙂
