Cauliflower Popcorn is loaded with all the flavor of your favorite snack chips and pop-ems with none of the downside!

Cauliflower Popcorn is so addictive I challenge you to make it so far as to get yours into the dehydrator (or oven) for step 2… without eating it all first!

This flavorful, smoky, cheesy, salty-sweet indulgence tastes phenomenal tossed up fresh… however, an hour or two in the dehydrator (or oven- see below) renders it crispy and warm with its tantalizing aromas wafting throughout the kitchen so do try to hold out!  This raw food yumminess is brimming with powerful life-force, enzymes, phytonutrients and vitamins galore.  It's a snack that makes us feel as phenomenal as it tastes!  Whenever I eat Raw Snacks I feel satiated, energized and just plain fantastic.  Cauliflower Popcorn is no exception!  Loaded with all the flavor of our favorite snack chips and tidbits without any of the downside… except perhaps that I couldn't hoard it all to myself once Jim had a taste.  He couldn't get enough and rates it…

"Outstanding!"

IMG_7264 - Version 2

The Benefits (and this is just a few mind you!)

Fights Cancer - Cauliflower contains sulforaphane, a sufur compound proven to kill cancer stem cells thus slowing tumor growth, and to inhibit the growth of cultured breast cancer cells leading to cell death.  Moreover, research shows, cauliflower with curcumin (the active compound in the turmeric in this recipe) may help prevent & treat prostrate cancer.  Additionally, the Indoles and isothiocyanates in cauliflower have been shown to potentially inhibit cancer development of the bladder, breast, colon, liver, lung and stomach according to the National Cancer Institute.

Boosts Heart Health – The sulforaphane in cauliflower has been shown to significantly improve blood pressure and kidney function. These benefits are related to improved DNA methylation, a process crucial for normal cellular function and gene expression especially in the easily damaged inner lining of the arteries.

Supports Detoxification - Cauliflower supports Phase 1 detoxification via certain antioxidants and Phase 2 detoxification via it's sulfur-containing nutrients while the glucosinolates in cauliflower activate detoxification enzymes in the liver.

Anti-Inflammatory - Excessive inflammatory response when no threat is present can lead to inflammation-related damage in the body linked to many diseases including cancer depending on the organs impacted.  Cauliflower's wealth of anti-inflammatory nutrients keep inflammation in check.

Rejuvenates Skin Hair & Nails - As you know by now, consuming a variety of veggies & fruits is important in order to receive all their valuable vitamins and minerals.  Cauliflower specifically, contains Vitamins A, E, C & K as well as B vitamins, folate, sodium, potassium, calcium, manganese, zinc, fats, niacin, copper and iron.  The biotin in cauliflower has been found to control dandruf and thicken nails.  The plethora of antioxidants such as vitamin C in cauliflower destroy free radicals that accelerate the signs of aging.  Additionally, the Vitamin C is required for growth & repair of tissues in all parts of the body including the formation of collagen in addition to making skin, scar tissue, tendons, ligaments and blood vessels.

Boosts Digestion - That good old aforementioned sulforaphane has been shown to protect the lining of the stomach by preventing bacterial overgrowth of Helicobacter pylori.  Additionally, cauliflower provides an great source of dietary fiber which is also crucial for digestive health.

Antioxidants & Phytonutrients Galore – Cauliflower is packed with tons of Vitamin C, beta-carotene and antioxidants like quercetin and cinnamic acid which provide cells adequate defense against attack from reqctive oxygen species or ROS. A proper supply of antioxidants helps banish free radicals enabling the body to resist aging caused by everyday pollutants, stress and more.

Boosts Brain Health - Cauliflowers abundant supply of choline is a B vitamin crucial in brain development. Choline intake during pregnancy "super-charges" the brain activity of animals in utero indicating it may boost cognitive function, prevent age-related memory decline, and improve memory & learning.

Overall Raw Foods Power – Nutrient dense, whole, plant-based foods that haven't been heated above 118 F retain their full nutritional value preserving all their naturally occuring living enzymes.  Additionally, raw foods are still filled with vital life energy – the magic of life force, also known as chi or prana.  I personally integrate a large portion of raw foods into my diet, finding at the moment as the weather is cooling, a proportion of 80% raw to 20% cooked is working best for me.  In the heat of summer, I find myself eating close to 100% raw foods – though someday this too may change – and of course you'll be the first to know 🙂  Not only are we each unique with personalized needs, what works for us now may not be what works best for us a year or 5 or 10 years down the line.  We always want to pay attention to the signals our bodies are providing in response to the changing seasons, our environment, habits, history, genetic predisposition etc.

This is my submission to the lovely Jacqueline at No Croutons Required and Lisa of FoodandSpice.

I've been wanting to make a raw food version of this snack favorite which is, more typically, roasted in the oven.  As you can tell, the results are beyond amazing!  Please enjoy this fantastic treat and leave your thoughts in the comments below!

Recipe for Cauliflower Popcorn

Ingredients

  • 1 head cauliflower separated into 2 x larger than popcorn pieces (they'll shrink in the dehydrator)
  • 1/2 cup nutritional yeast (I like KAL brand)
  • 1/2 tsp turmeric
  • 1/2 tsp onion powder
  • 1 tsp smoked paprika (if you're a raw purist skip, tho it adds fabulous flavor)
  • 1 tsp powdered stevia or xylitol
  • 1/4 tsp cayenne pepper
  • sea salt & fresh cracked pepper to taste
  • 2 Tbsp extra virgin coconut oil melted (or sub EVOO or use a combo of the two)

Method

  1. Shake everything up in a large ziplock bag until all the pieces are thoroughly coated.
  2. Spread out on a couple of teflex sheet covered dehydrator trays and dehydrate* at 135F for 1 hour (don't worry, the food is throwing off heat at this point & the internal temp remains under 115) and turn down to 115F for another hour or two until the mixture has dried and the popcorn is slightly crispy.

*Alternatively, if you don't yet have a dehydrator, spread mixture on a silpat or parchment covered baking sheet, place in oven on lowest setting with door propped open an inch or two. Check on the popcorn often as the oven will still likely be much hotter than 135F & 115F and, therefore, the process will be much faster.

 Enjoy!

Fresh homemade Almond Milk:  the creamiest, freshest milk you've ever had.

Originally, I began this post with all the amazing benefits of drinking homemade Nut Milks.  However, since I absolutely adore making them for how fabulous they taste – let's lead with flavor!  We're talking creamy, richness like you won't believe.  And, while the subtle, sweet, mellow flavor of nut milk alone is very satisfying, there is a whole range of sweeteners from dates, honey, maple syrup or figs, and flavors such as cinnamon, cacao, vanilla powder, or whatever you choose to add, to customize them in even more amazing ways!  Prepare them as rich & creamy as you like, simply by adjusting the amount of filtered water you add.  So pure.  So good.

Homemade Nut Milk is delicious enough to have for dessert!  Warning:  You may have trouble stopping at just one glass 🙂

Nothing beats a straight up jar of creamy, rich Almond, Brazil Nut or Walnut Milk (Recipes & variations below).  However, Nut Milks are extremely versatile and can also be used for morning cereal, smoothies, hot chocolate, soups, for fabulous raw vegan ice-cream (Strawberry or Peaches-n-Cream anyone?) and even in baking and cooking as swap outs for dairy.  Basically anwhere we may have used a dairy milk we can substitute Nut Milks!

Fresh Brazil Nut Milks and Macadamia Nut Milk standing by!

Nuts and seeds are an excellent source of protein as well as being rich in phytonutrients, minerals, fiber and antioxidants such as selenium and vitamin E.  One of the best ways to prepare nuts and seeds is to make these delicious, enzyme-rich nut milks.

Nuts should be pre-soaked for 8-12 hours before blending in a heavy duty blender such as a Vitamix, to neutralize enzyme inhibitors, enabling excellent digestion, and to reduce phytates, increasing mineral availability.  Sprouting is an excellent (optional) 2nd step which cultures the nuts adding a rich source of probiotics to the nut milk.  Sprouting is done by simply draining the soaked nuts then adding to a sprouting jar or colander for another 8-12 hours, and finishing with a thorough rinse.

The freshly made, completely raw and live, preservative-free nut milks we make in our own kitchen will far exceed the taste and nutrition of commercial nut milks and stay fresh for five or six days in the fridge.  These delicious recipes are as simple to make as their variations are endless.  I've even included instructions for no-soak-required instant nut milk too!

IMG_1683

A bottle of freshly made Sunflower-Hemp Milk.  Sooo good!  And amazing for our bodies too!

The pristine, yumminess of these delicious Nut Milks will have us hooked at first sip… while the myriad benefits replacing dairy has on our health are a huge added bonus.  These milks really can do the body good!

**Do enough research on dairy and you'll likely shift away from it.  Feel free to check out this video in which I discuss the body's pH and dairy's role in creating acidic conditions (dairy is acidic post mobilization) causing osteoporosis and other highly undesirable outcomes (an acidic body being a magnet for disease).  Read more here.  If the health implications of consuming dairy aren't impetus enough to limit our consumption, the unfortunate experience the poor cows go through (read about that here) and all the icky stuff that makes it into the end product- which I just deleted cause it's that gross so you can read about that here - probably will.

Nut milks really can do the body good :)

The pulp that remains from strained nut milk can be used in raw crackers, cookies or as flour for crusts of desserts.  Creamier nuts such as cashews and pecans, blend right into smooth milk, no straining required, making them even easier to prepare.  Of course, 15 second instant nut milk is easiest of all.  No matter how we make them, the end results are full of beautiful, luscious flavor and goodness for our body, mind and spirit!

Are the leaves on the trees where you live?  Here on the East Coast the leaves seem to be doubling in size by the day.  Usually all the leaves are out by May 7th!

What else is going on in your part of the world?  It's been pouring like crazy for a couple of days here… the birds & plants are quite pleased 🙂

am in love with plant based Living Foods!  SO fresh.  So clean.  So flavorful.   Not to mention energizing, beautifying & healing…  they taste better than traditional cooked fare!  I really feel it's what nature intended for our nourishment.

French Hazelnut Pumpkin Pie with "whipped cream" is no exception – this coming from a girl who always disliked hated pumpkin pie – that is until 6 years ago, when I discovered an amazing French recipe for cooked Hazelnut Pumpkin Pie.  Of course, now that I follow a primarily Raw Vegan foodstyle (because it tastes and makes me feel so amazing!) I had to figure out a way to upgrade that French recipe to a delicious, enzyme rich, Living Foods version.

IMG_5848

Perfect for entertaining – or for just having as your own special, beautifying treat awaiting you in the freezer.  Since it's frozen it remains beautifully fresh compared to a traditional pie.IMG_5837

This knockout has a candied cookie-like crust and a creamy cheesecake-esque pumpkin filling.

IMG_5841

Oh, and shhh… don't tell anyone about the secret ingredient that makes this SO much creamier & delish than any pumpkin pie you've had before (carrot juice).  Plus, as always, it's unbelievably simple to prepare.

 Please enjoy!

Recipe for French Hazelnut Pumpkin Pie

Crust:

Ingredients:

  • 1 3/4 cup raw pecans (or a combo of pecan, macadamia & walnuts, preferably soaked overnight & deydrated for 24 hours)
  •
1/2 cup raw hazelnuts (preferably soaked overnight & dehydrated for 24 hours)
  • 2 tablespoons maple syrup
  •
1 tablespoon coconut oil

  • 1 1/2 tablespoons date paste (or use 2-3 dates mixed into 1st step of nut processing- just be careful not to turn the nuts into date-nut butter!)
  • 1/2 tsp himalayan salt

Method:

  1. Place nuts in food processor, pulse into small crumbs – be mindful not to overprocess into nut butter!
  2. Combine the rest of ingredients by hand in a separate bowl.
  3. Add this mixture to the crumbed nuts, mixing by hand until fully incorporated.  Mixture should stick together when pinched between fingers.
  4. Dump this into a 9 inch tart pan with removable bottom (or use saran if tart pan is one piece).  If you don't have a tart pan, use a pie plate with saran.
  5. Press mixture firmly into tart pan or pie plate.  Depending on size of your pan, thickness of your crust, you may have extra crust left over (especially if using the shorter edged tart pan.  No problem! Just make some mini tarts or cutout a few "cookies" with your favorite cookie cutter!  Once dehydrated fill the extra tarts with any leftover filling you may have- or with a little cashew cream topped with fresh sliced fruit! Pretty & Yummy 🙂
  6. Dehydrate 48 hours at 115.

  7. Chill crust in freezer for 1/2 hour before filling.

Filling

Ingredients:

  •
1 1/2 cups cashews
  • 1/2 cup chopped pumpkin
  • 1/2 cup maple syrup

  • 1/2 cup coconut oil

  • 1/2 cup carrot juice plus 1/4 cup reserved for blending assistance if needed (yes that's right, carrot juice!)
  • 1/2 tablespoon vanilla
  •
1/4 teaspoon himalayan salt
  • 3/4 teaspoon cinnamon
  •
1/8 teaspoon nutmeg

  • 1/8 teaspoon ground cloves (optional)

Method:

  1. Blend all ingredients in Vitamix until super smooth.  Add additional 1/4 cup carrot juice as needed to facilitate blending- tho try not to use more than 2 tablespoons.

  2. Pour into tart crust and chill in freezer overnight.
  3. Store in freezer and slice it right out of the freezer.
  4. Add a small dallop of whipped cream (click preceding link for recipe!) if desired.

**Disclaimer! The above recipe is my tweaked version which is SO amazing as I've already mentioned, I know:) However, I wasn't able to get pictures of it so the pics here are of the 1st version which looks a little different. The above tweaked recipe will have a more solid, finely ground crust and the filling is much smoother and creamier. Bottom line, your pie will have a less grainy texture in both the filling & crust. Although they look somewhat similar I wanted to point this out.

Let me know how you like this one!  Did you make any tweaks to make it your own?  How were your Holidays?  Any New Year's Resolutions?

All Love,

Juliane

My hubby used to be a canned, creamed soup connoisseur with Cream of Celery at the top of his favorites.  Of course, unless we've been living under a rock, we're aware that canned soups are an Mmmm Mmmm Bad choice if we're interested in amazing health, vitality & happiness 🙂  You can imagine my delight when I served this delicious Raw Vegan version and he had no idea it wasn't "cooked" or that it didn't have cream in it!  Yes, it is that good.  And SO easy!

It would be a perfect first course for a holiday dinner, in fact I'll be serving a red bell pepper twist on it for Christmas.  Plus, as promised, I'm making an entirely Raw Vegan Christmas Dinner so stay tuned as I'll be sharing it all with you!

  • Himalayan Pink Salt to taste
  • Freshly ground black pepper to garnish

Cleansing-green-smoothie-StyleNectar
Beautifying Daily Detox Green Smoothie

It seems everywhere I turn lately I see info about detoxing, from the "Master Cleanse" to juice cleanses, menu programs, supplements, mixes, workouts, and products all supposedly dedicated to cleansing.  Yes, many are a step up from the Standard American Diet (SAD), however, I notice a lot of commonly held myths being perpetuated and crucial information missing which might take the seemingly complex mystery out of why it's so easy for some of us to look & feel our best, while others of us attempt to follow the aforementioned options and either:

A) Lose weight while unknowingly aging ourselves inside & out via the very process.

  B) Never get very far due to cravings, relapses, time-constraints etc.

As a StyleNectar reader you've followed my progression from eating what is widely considered healthy, organic fare (advocating portion control for richer recipes) to investigating vegetarian, raw vegan and Nutritarian approaches and arriving, finally, at my current status of being Vegan (for me a combo of 80% raw, 20% cooked food).  For the record I must clarify while I absolutely respect & DO recommend learning the science/research behind Dr. Fuhrman's Nutritarian lifestyle (I eat 95% of the types of foods he endorses) I found two major shortfalls to his approach:

1) I don't find the recipes very tasty – the exception of his frozen banana ice-cream which, albeit yummy…

2) Didn't follow proper food combining guidelines.  Improper food combining, (I'll be providing info on this soon) unbeknownst to many with the noblest of healthy lifestyle intentions, may actually be a major cause of diet sabotage and accelerated aging.

For those of us with exceptional standards, who aren't simply trying to wean ourselves off fast food and sodas, we'll be interested to understand the keys to appropriate food combining Dr. Fuhrman omits; huge secrets to anti-aging and optimizing one's health, longevity and beauty.  Why doesn't he include them?  My theory is he's targeting the large, average S.A.D. following audience who wouldn't be ready for this level of info.

Chalk it up to the fact I never watch TV (and I grew up without one) that perhaps I'm less conditioned and more apt to be open minded.  My love of learning and obsession for figuring out how to optimize my short time on earth has the affect that I am always evolving and changing.  As a result, many things have fallen away from my life which no longer serve me, providing a freedom I cherish, from the confines of habit and conditioning.  Our lives are like pieces of art we refine for the duration.  It all starts with acceptance of where we are, a desire to go beyond that which causes us to suffer, and a willingness to see the reality beneath the surface.

Anywho, back on track. You want the information, right?!

One of the biggest secrets to staying lean & aging beautifully pertains not just to WHAT we're eating but HOW we're eating it.  Let's talk about digestion and enzymes. (1)

Enzymes are essential to life, perhaps more crucial than the air we breath as without them our biochemical processes would cease.  Over 5000 different types of enzymes work together with vitamins and minerals acting as catalysts to accelerate chemical reactions.  When our body has an abundance of enzymes, it can protect itself and repair the damage from almost all degenerative disease disorders.  As we age our enzymes are depleted which causes us to age more quickly, get disease earlier in life, and acquire physical & mental impairments as our body degenerates.  This explains why when we're young we can handle a diet of bread, pasta and cooked foods without much problem.  However, this type of diet causes rapid aging and depletion of enzyme supplies.

Nutrition-digestive-enzymes
The theory is that a lack of enzymes in the body makes the blood dirty (10), potentially creating the base for many diseases each time we eat a cooked or processed food. (5, 6)  These dead or denatured foods have no living enzymes with most the nutrients diminished significantly.

The harder a food is to digest, the more enzymes required.  The S.A.D. diet (an inflammatory, acidic diet of excessive protein (1), poorly combined meals & genetically modified, processed foods/chemicals/powders etc. all of which I'll talk about in a future post) requires so much work and enzymatic activity to digest that the body has none left over for cleansing and providing us energy!  For most of us, all our energy is going just to digestion!  The easier our food is to digest, the less enzymes required, the more energy for us and the less disease and aging we'll experience.  Cooked and processed foods overwork and drain our body's energy.

An easily digested diet, based on fresh greens, vegetables & raw fruits, floods our bodies with enzymes, contributing to the body's ability to protect and repair, instead of continually and slowly draining the body's energy and enzyme reserves.  The more enzymes we take in, the more quickly our body can restore and strengthen itself, freeing up energy from an otherwise taxing digestive process.  Thus our body has a chance to detoxify and cleanse away aging, disease causing toxins trapped in our cells.  Suddenly we have more energy than we've ever experienced before when all our energy was devoted to digestion alone!  Excess fat melts away and our body becomes lean & toned with minimal effort.

Yes!  You read that right.

When we're eating a toxic diet of inflammatory, acidic foods, (more later on exactly what these are) our body goes into overdrive not only digesting but hiding those toxins as far away from the internal organs as possible in FAT CELLS (9) created solely for the purpose!  Transitioning to a cleansing, enzyme rich diet signals to our body that it's safe to shed those toxin laden fat cells so they may be released from our body.  This results in our bodies becoming lean and toned just through changing what we eat!  I personally was floored to figure out that it's not necessary or even ideal to overdo it spending hours working out – a process in itself, if overdone, creates excessive aging inside and out (2, 3, 4) – partly because the protein intake required to support such activity is incredibly taxing on the digestive system (7) and for other reasons I'll go into in a future post.  This is not to say it's not important to exercise and be active.  I personally love walking, ballet and yoga in moderation.

We benefit far more from an attitude of compassionate self-acceptance than we do from one of tough love via themes like Just Do It! which wreak of the unconscious forcefulness frequently followed by "beatings" in our heads for not living up to some arbitrary goal designed to sell product.  As we can see from just looking around, these overpopularized slogans don't seem to be serving the population's waist line very well.

Leading to my final point about the overpopularized trend of temporary cleanses and why they're not effective.  Say we do a juice "detox" for 3 days or a "cleansing diet" for month… What could be harmful about that you ask?

First, the sudden influx of non-toxic, enzyme-rich activity will signal the body to release a slew of toxins – flooding it with an overload of toxicity the immune system very well may not be able to handle which can result in an individual becoming quite ill.

Second, removing deeply embedded layers of toxicity acrued over a lifetime takes long term dedication and a careful transition into a permanent detoxifying lifestyle. Real cleansing, removing years of accumulated toxins, is a gradual process to be approached with a great deal of careful, concious awareness.  It requires gradual changes of implementing an alkaline diet and long-term dedication.  Otherwise, once the aforementioned temporary "detox" or "cleanse" is over, and we return to our previous, average diet, we're just reabsorbing all the toxicity we've stirred up into our systems, completely defeating the objective.

Below is a beautifying, satiating and enzyme rich green smoothie which would be a safe introduction for any person interested in transitioning into a detoxifying lifestyle.  I personally switch it up with my Quadruple Berry Acai Smoothie (coming soon) each morning.  Keeps me buzzing along until 3 PM!  So not they way I used to be- I have to remind myself to eat these days 'cause I have so much energy.  Oh- that's a point I forgot to mention- when we eat in this alkaline, enzyme-rich fashion, our bodies become so efficient at putting our nutrition to use- we don't actually NEED to eat as much!  And that too, leads to decreased appetite as well as a lean, toned physique.

Please enjoy!

Daily Detox Green Smoothie

Daily Detox Green Smoothie

(Makes four, 16 oz or two, 32oz servings.  Feel free to freeze or refrigerate leftovers.)

Ingredients:

  • 16 oz purified, cold water (or a combo of ice cubes/water)
  • 6 oz romaine (or green leaf lettuce)
  • 6 oz spinach (or kale, collards or dandelion greens) NOTE: If you're not used to green drinks start with a smaller amount of the bitter greens. As your body chemistry changes from incorporating more greens, so will your palate, and you'll be able to enjoy larger quantities of the stronger greens. As always, be sure to rotate your greens so you're receiving a balanced intake of the various nutrients they provide)
  • 1/3 of a fennel bulb (or sub celery - switch them up like we do the greens)
  • 1 apple
  • 1 pear
  • giant handful fresh cilantro WITH stems (VERY cleansing – or sub parsley)
  • 1 lime or lemon, peeled and chunked
  • 8 oz fresh or frozen pineapple (or sub banana or peaches)
  • Stevia to taste, if desired

Method:

  1. Chunk the ingredients in order to fit into your heavy duty blender (The best investment we can make in detoxifying lifestyle is a Vitamix Blender)
  2. Add the water and romaine to the blender and incorporate on low.
  3. Add spinach, blending on low til incorporated.
  4. In same manner add the fennel, apple and pear, using high if necessary.
  5. Feed in the herbs, lime and pineapple and blend til incorporated.
  6. Add stevia to taste and blend once more. (By limiting the amount of blending on high, we keep the smoothie colder & incorporate less air.)
